Resveratrol and its derivatives are the most important sources of dietary stilbenoids. Resveratrol’s glucosides such as resveratrol 3-O-β-D-glucoside and resveratrol 2-O-β-D-glucoside possess many advantages than resveratrol, such as higher hydrophilic and apparent benefits. Herein, the inhibition against fructose-derived advanced glycation end products (AGEs) formation of resveratrol glucosides was compared. The position of glucoside was found to be an important factor affecting inhibitory effect against AGEs formation. Resveratrol O-glucosides attached in the position of C-2, C-3, C-3' or C-4' showed slightly higher inhibition against AGEs formation than that of resveratrol. The anti-AGEs activity is correlated with DPPH radical scavenging capacity but not the methylglyoxal trapping capacity.
