The effect of drying mode and conditions of storage on colour stability of dried onion was investigated in this work. Drying of onion at 70 or 80°C yielded brown product of unacceptable quality. A temperature up to 80°C can be applied to dry onion only for a short time, until less than 50% of water is evaporated. Then the temperature of air must be lowered to 60°C. When the stepwise change of temperature was done properly the colour stability of onion did not differ from that observed for onion dried at 60°C. Both, infrared and microwave energy promoted browning of dried onion. Moreover, the colour stability was less than that of onion dried by convection.
Materiał badawczy stanowiła cebula dwóch odmian, v. Oporto i v. Błońska uprawianych w Polsce. Cebulę obierano ręcznie i krojono mechanicznie na plastry o grubości 3 mm. Plastry suszono konwekcyjnie w 60,70 i 80°C, oraz w warunkach zmiennej temperatury suszenia. Zmiana temperatury powietrza z 70 lub 80°C do 60°C następowała po usunięciu 50 lub 75% wody z materiału suszonego. Ponadto cebulę suszono za pomocą promieniowania podczerwonego, oraz wspomagając suszenie konwekcyjne w 60°C mikrofalami. Wysuszoną cebulę pakowano w woreczki z folii PA/PE i przechowywano przez okres 6 miesięcy. Barwę cebuli mierzono za pomocą kolorymetru Minolta Chroma CR 300 stosując system Yxy CIE. Stwierdzono, że suszenie w 70 i 80°C powoduje znaczne zbrązowienie cebuli (Tab. 2). Barwa cebuli suszonej w 80°C do momentu usunięcia 50% wody i dosuszonej w 60°C nie różniła się istotnie od barwy cebuli suszonej cały czas w 60°C (Tab. 2). Zmiany barwy cebuli otrzymanej w ten sposób w czasie przechowywania nie różniły się od tych jakie obserwowano dla cebuli suszonej w 60°C (Rys. 1). Zastosowanie podczerwieni lub mikrofal przyczyniało się do mniejszej stabilności barwy cebuli suszonej w czasie przechowywania (Rys. 2). Wyniki tej pracy wskazują również, że przechowywanie suszu w ciemności daje lepszą stabilność barwy w porównaniu do przechowywania na świetle (Rys. 3).
