The cover picture shows the real‐time traceability analysis of sorghum by soldering iron‐based rapid evaporative ionization mass spectrometry (SI‐REIMS) and foodomics analysis. The direct analysis of samples with low conductivity by MS is a major challenge. In this work, sorghum powder samples were directly analyzed by soldering iron burning and MS profiling data was acquired. Foodomics methods such as PCA and OPLS‐DA were used to establish a recognition model and to select markers with strong discrimination power. The results indicate that the SI‐REIMS combined with foodomics is a useful tool for real‐time traceability analysis of poor conductivity samples.
