The technology of non‐thermal plasma (NTP), widely used in material processing, offers significant potential for the food and agri‐material processing sectors. Recent developments in plasma engineering have enabled the generation of NTP at atmospheric pressure. Plasma generation at atmospheric pressure is of interest both technically and commercially to the food industry because it does not require extreme processing conditions. This chapter introduces the reader to the fundamentals of atmospheric‐pressure NTP followed by a critical analysis of the recent developments in its use for decontamination of foods and associated changes in food quality.
