Citrus fruits production in Tunisia reached 330 000 tons in 2013. The “Maltese,” the most representative variety of the produced oranges, reached 130 000 tons in 2013 or 15% of the total production. Only this variety is exported in our country due to its high and exceptional sensorial quality. The peel and leaves are the most interesting by-products of oranges. They contain proteins, minerals, and other interesting nutrients. Flavedo is the peel’s outer layer and it is a source of essential oils, which have been used since ancient times by the flavor and fragrance industry. The two by-products (peel and leaves) contain a high moisture content that reaches 65%.
