The rheological property and retrogradation regulation of amylopectins from three types of rice (indica rice, japonica rice and waxy rice) in China were investigated using concentric cylinder viscometer. The flow behavior index of three rice amylopectin pastes were less than 1 according to power law model and the flow behavior index increasing with storage time suggests that the fluid presents pseudoplastic behavior and the rigidity of macromolecular chain increases during storage. Among the three types of rice, the flow behavior index and retrogradation rate of indica rice paste are the greatest, while waxy rice paste has the smallest flow behavior index and retrogradation rate. Power function models based on molecular mass are proved suitable for the prediction of retrogradation rate of amylopectin paste.
