Compositional characterization of commercially produced apple juice concentrate has been completed on 92 samples collected over a period of 3 years. These samples were collected from around the world and represent the major apple-producing areas. Subsamples of each sample were sent to 11 laboratories for the analytical work. Results from each laboratory were averaged to obtain means for each analyte. Analytical ranges, means, and standard deviations were consistent for all analytes tested within and between years. Large quantitative variation between samples for most analytes was noted. This was especially true for the polyphenolics. The data developed by the project should be useful in evaluating the authenticity of commercially produced apple juice concentrate.
