The selective esterification of a fatty acid and a polyalcohol is carried out by using, as catalyst, large pore zeolites and zeo-types, preferably with 12-membered rings (faujasite, mordenite, etc.) and acid or base characteristics. Saturated or unsaturated fatty acids with 4-22 carbon atoms are used, preferably oleic, palmitic, stearic, and isostearic acids. Diols and triols are used, preferably glycerin.
