Response surface methodology (RSM) was applied to predict optimum conditions for extraction of polysaccharide from Chinese jujube. A central composite design involving liquid to solid ratio, extraction time and extraction temperature was used, and second-order model for polysaccharide yield was employed to generate the response surface. The optimized condition was as follows: liquid to solid ratio16.54:1(mL/g), extraction time 5.01h and extraction temperature 91.08°C. The predicted polysaccharide yield at condition was 2.64%. Experimental verification gave the value of 2.61%.
