La carence en zinc est frequente chez le nourisson chez qui elle peut se reveler uniquement par un retard de croissance. Les metallothioneines (MT) sont des proteines de stockage du Zn dans l'organisme, d'ou l'interet de leur dosage qui pourrait constituer une excellente approche des reserves en Zn. L'absorption du Zn est influencee par le regime, en particulier par le type de proteines. L'effet inhibiteur des proteines du soja est mal connu meme s'il a ete attribue a la presence de phytates. L'objectif de notre etude est de comparer l'effet de proteines du lait aux isolats de soja depourvus de fibres sur les reserves hepatiques en Zn de l'animal jeune. Trois groupes de rats (n = 8) pris au sevrage ont recu un regime different uniquement par le type de proteines: caseines (Cas), proteines de soja (Soja), proteines de lactoserum (Lact). Les rats sont suivis sur une periode de 8 semaines. Les regimes contiennent 23 % de proteines, 10 g/kg de calcium, 300 mg/kg de fer, 45 mg/kg de Zn et 12,5 mg/kg de cuivre. Les concentrations hepatiques de Zn, mesurees au SAA en flamme (Perkin-Elmer 100), et celles des MT par CLHP en phase inverse, sont les suivantes (μg/g de foie, moyenne +/- ecart type): 1) MT: groupe Soja 162,85 +/- 42,56; groupe Cas 168,82 +/- 30,58; groupe Lact 146,02 +/- 23,56; sans differences significatives entre les trois groupes; 2) Zn: groupe Soja 72,44 +/- 11,39, groupe Cas 80,61 +/- 16,32, groupe Lact 86,23 +/- 6,71, concentrations significativement differentes (p < 0,01) entre groupe Soja et groupe Lact. Conclusion. -- Le type de proteine influence la biodisponibilite des oligoelements, les proteines de soja sous forme d'isolat semblent diminuer la biodisponibilite du Zn. En revanche, les proteines du lait semblent avoir un effet benefique sur le metabolisme du Zn chez le rat jeune.
