Letude porte sur un nouveau type d'echangeur de chaleur pour produits visqueux notamment agroalimentaires (confitures, bechamel). Dans cet appareil, le fluide s'ecoule dans l'entrefer de deux cones. Le cone interieur est en rotation et, sur le cone exterieur (fixe), on impose un flux de chaleur. La modelisation de l'ecoulement est effectuee dans une geometrie bidimensionnelle par la methode des volumes finis sur le logiciel Phoenics. La modelisation tient compte des caracteres thermodependants et rheofluidifiants que possedent de nombreux produits alimentaires. Les resultats numeriques sont valides par ceux obtenus experimentalement sur une installation pilote. Le principal phenomene observe, aussi bien par l'experience que par la simulation, est l'apparition d'une recirculation plus ou moins importante qui renouvelle le fluide a la paroi chauffante, intensifie les transferts et agit comme un melangeur.
Hydrodynamic and thermal study of a conical rotating heat exchanger. This work reports on a new heat exchanger for various food products (jam, sauces). The fluid flows between two coaxial parallel cones from the vertex to the base. The inner cone rotates and the outer is stationary. A uniform heat flux is delivered through the external wall. The numerical modelling is performed on a bidimensional configuration by the finite-volume method with Phoenics package. The model takes into account the rheological food products characteristics.The principal phenomenon, numerically and experimentally observed, is the appearance of the recirculation that renews the fluid on the heating wall, increases the heat transfer and has a mixing effect.
