The use of dynamic coupled column liquid chromatography (DCCLC) allows the determination of several model aroma compounds. β-Cyclodextrin complex formation constants such as 2-methoxynaphtalene, ethyl salicylate or 1-menthol. K f values from 240 to 520 M - 1 were obtained using two different calculation modes. However, constant values may be obtained only when water soluble complexes are involved. When insoluble complexes are produced, as indicated by the pressure drop and the fouling of the generator column, a decrease in the calculated K f value as a function of the volume of β-cyclodextrin used is noticed. A decrease in the calculated formation constant was obtained when β-ionone and limonene or ethyl salicylate, 1-menthol at high β-cyclodextrin concentration were used as guest molecules.
