Sucrose etherification with the 1,2-epoxydodecane was investigated using various tertiary amines as catalysts. The reversible addition of the tertiary amine on the epoxide led to the formation of a strongly basic quaternary ammonium salt, responsible for the catalytic activity observed. From those results, a new efficient heterogeneous catalytic process was also developed and consists in the use of basic anion-exchange resins as catalyst. We suggested that the 1,2-dodecanediol side production was necessary to start the reaction by increasing the interfacial area between the 1,2-epoxydodecane and the sucrose phase. L’éthérification du saccharose par le 1,2-époxydodécane a été catalysée en présence de différentes amines tertiaires. L’addition réversible de l’amine tertiaire sur l’époxyde conduit à la formation d’un sel d’ammonium quaternaire fortement basique, à l’origine de l’activité catalytique observée. Sur la base de ces résultats, un nouveau procédé de catalyse hétérogène a été développé et consiste en l’utilisation de résines échangeuses d’ions basiques. La production secondaire de 1,2-dodécanediol est nécessaire et permet d’augmenter le contact entre le 1,2-époxydodécane et le saccharose, amorçant ainsi la réaction catalytique.
