Zapewnienie bezpieczeństwa żywności przez cały okres jej obecności na danym rynku wynika bezpośrednio z unijnego aktu prawnego - Rozporządzenia Komisji (WE) nr 178/2002. Określenie trwałości przechowalniczej danego produktu, zgodnie z jego specyfikacją, polega na analizie jakościowej i ilościowej m.in. jego parametrów fizykochemicznych oraz mikrobiologicznych. Głównymi patogenami żywności, których obecność w próbce jest niepożądana, są: Salmonella, Listeria monocytogenes, Campylobacter oraz Escherichia coli. Stosowanie polityki zapewnienia jakości systemu HACCP w przedsiębiorstwach produkujących żywność minimalizuje ryzyko zanieczyszczenia produktów, a tym samym zwiększa prawdopodobieństwo pomyślnego zakończenia badań trwałości żywności.
Ensuring food safety throughout its presence on a given market results directly from a EU legal act - Commission Regulation (EC) No. 178/2002. Determining the storage stability of a given product, according to its specification, is based on the qualitative and quantitative analysis of its physicochemical and microbiological parameters, among others. The main food pathogens whose presence in a sample is undesirable are: Salmonella, Listeria monocytogenes, Campylobacter and Escherichia coli. The application of the HACCP system’s quality assurance policy in food producers minimizes the risk of product contamination and thus increases the probability of successful completion of food shelf-life testing.
