W artykule przedstawiono wpływ ogrzewania na zmiany barwy soku z buraka ćwikłowego z zastosowaniem metody powierzchni odpowiedzi. Badano wpływ trzech zmiennych niezależnych: pH, temperatury i czasu ogrzewania na zmienne zależne: parametry barwy w systemie L*a*b* oraz zawartość barwników betalainowych. Największą stabilność barwy i betacyjanów stwierdzano w próbach o pH 4,5. Na badane odpowiedzi największy wpływ miał czas i temperatura ogrzewania, zaś wpływ pH był niewielki. W wyniku ogrzewania zmniejszała się zawartość betacyjanów, stosunek zawartości barwników czerwonych do żółtych, parametr a* i C*, zaś wzrastały wartości parametrów L*, b* i h*. Równania płaszczyzn odpowiedzi pozwalają na przewidywanie zmian barwy w ogrzewanym soku buraczanym.
The influence of heating on the changes of red beet juice colour using the response surface method was presented. The influence of three independent variables: pH, temperature and duration of heating on responses (dependent variables): colour parameters in the CIE L*a*b* system and betalains contents was examined. The highest stability of colour and betacyanines was determined in pH 4,5. The time and temperature of heating had the strongest effect on responses, the effect of pH was relatively small. During heating time a decline of red pigments contents, red to yellow pigment ratio, a* and C* values and an increase of L*, b*, h* values were observed. The equations of the response surfaces allow for predicting the changes of colour of heated red beet juice.
