Omówiono historię odkrycia i występowanie oraz dokonano charakterystyki rodzaju bakterii Alicyclobacillus, szczególnie gatunku A. acidoterrestris. Te kwasolubne przetrwalnikujące i ciepłooporne bakterie (ang.: ATSB) występują w glebie, na liściach drzew i owocach. Przedstawiono sposoby zapobiegania zepsuciu soków przez A. acidoterrestris. Są to m. in.: stosowanie zasad GMP, efektywne mycie owoców, stosowanie utrwalania UHT, obniżenie zawartości tlenu do 0,1%, dodatek alkoholu w ilości 6% oraz sterylna filtracja. W 2001 r. dokonano wyboru dwóch metod analitycznych o dużej czułości do wykrywania Alicyclobacillus. Badania rozpoczęte w Polsce wykazały obecność tego rodzaju bakterii w koncentracie jabłkowym i brak w soku z aro- nii i truskawek.
History of discovery and appearance of bacteria Alicyclobacillus are discussed in this paper. The characteristic of this genus is performed. These acidothermophiiic sporeforming bacteria (ATSB) are present in the soil, on the leaves and fruit surface. The methods serving for prevention juice infection by A. acidoterrestris are presented. They are among others: application of GMP, effective fruit washing, use of UHT, reduction of oxygen contents to 0,1%, addition of alcohol in quantity 6%, sterile filtration. In 2001 two high sensitivity analytic methods for detection Alicyclobacillus were defined. In Poland the researches show the presence of this genus in the apple juice concentrate and absence in strawberry and black chokeberry juices.
