The synergistic effects of ultrasound and β‐d‐glucosidase in aroma of orange juice were investigated. β‐d‐Glucosidase significantly increased the content of ester, aldehyde, alcohol, terpene, acid, and phenol, and insignificantly increased the ketone content in orange juice.
