BACKGROUNDA hydrolysis of glyceryltrioleate catalyzed by Candida rugosa lipase (CRL) was carried out to investigate the interaction of acetaldehyde and CRL. Acetaldehyde at low‐dose stimulated CRL activity, but decreased it at high‐dose, confirming a typical hormetic phenomenon.
