ABSTRACTOptical microscopy, proximate analysis, differential scanning calorimetry and rheological oscillatory tests were done to evaluate the physical, thermal and rheological properties of starches isolated from the tubers makal (Xanthosoma yucatanensis), sweet potato (Ipomea batata), cassava (Manihot esculenta) and sago (Marantha arundinacea).
