BACKGROUND: Water bamboo shoot (WBS) (Zizania caduciflora L.) is a fleshy aquatic vegetable susceptible to lignification. In this study, effects of 1‐methylcyclopropene (1‐MCP) anti‐ethylene treatment on lignification of harvested peeled WBS were investigated.
