BACKGROUND: The high oxygen availability in solid‐state cultures makes them especially suitable for fungal enzyme production. Glycogen‐rich mussel processing wastewaters have been used successfully as substrates for amylase production by Aspegillus oryzae in solid‐state cultures supported in polyurethane foam.
