ABSTRACTThe enhancement of the physiological activities of the cooking drip of Hizikia fusiformis (CDH) by electron‐beam irradiation was investigated to utilize the waste cooking drip obtained from the seaweed industry. On applying electron‐beam irradiation, the dark color of the cooking drip became brighter. The 2,2‐diphenyl‐1‐picrylhydrazyl radical scavenging activity of the CDH extracts was increased by electron‐beam irradiation. This was explained by the increase in the content of polyphenolic compounds in CDH after electron‐beam irradiation. Furthermore, there was significant increase in the tyrosinase‐inhibiting and angiotensin I‐converting enzyme inhibitory activity in the irradiated CDH. These results suggest that the wasted seaweed cooking drip can be successfully used as functional components by the food and cosmetic industries....
