Las aguas residuales del aceite de oliva (alpechin), que se obtienen en grandes cantidades durante la produccion del aceite de oliva, causan graves problemas en el area mediterranea debido a su elevado valor DQO/DBO y a sus efectos antimicrobianos y fitotoxicos en el ambiente. A nivel ecologico, las conocidas propiedades perjudiciales del alpechin se atribuyen a los compuestos fenolicos tales como acidos aromaticos, alcoholes y aldehidos. Metodos fisicoquimicos y biologicos diferentes se han ensayado para purificar estas aguas residuales. En la actualidad una posible via para la purificacion biotecnologica por medio de la degradacion microbiana de los compuestos fenolicos se esta utilizando en el Departamento de Microbiologia de Granada en colaboracion con la Fachhochschule de Munster y la Universidad de Bonn. La primera etapa de esta colaboracion es el desarrollo de un metodo analitico para la identificacion exacta de los compuestos fenolicos en el alpechin original y posteriomente en los productos de fermentacion. Con este proposito, el alpechin se ajusta a pH 4.5, se extrae con acetato de etilo y se evapora a sequedad. Despues de la derivatizacion con N-metil-N-trimetilsilil-trifluoracetamida (MSTFA), el residuo se separa por cromatografia gaseosa en columna capilar y se recogen los correspondientes registros del espectro de masas. Hasta el momento se han identificado en el alpechin 10 compuestos fenolicos y distintos acidos grasos por comparacion de sus espectros de masa con los de autenticas sustancias de referencia. Hasta el momento, se ha estudiado la degradacion bioquimica de los principales componentes por Aspergillus terreus y Bacillus pumilus, utilizando sustancias de referencia definidas en medios de cultivo adecuados. A intervalos previamente fijados, se tomaban muestras del proceso de fermentacion en Espana. Estas muestras se extraian y se enviabana Alemania donde se analizaban por los metodos de cromatografia gaseosaespectrometria de masas descritos anteriormente. En la presente ponencia se describen los primeros resultados obtenidos en esta investigacion.
