Bovine β-Lactoglobulin (β-Lg) is one of the major proteins in the whey of cow milk. In the present study, the aggregation kinetic for β-Lg dispersion at different pH environment was investigated using UV-Vis spectroscopy. The kinetic's parameter of an aggregation process was observed at acidic pH and explained the late aggregation at neutral pH using computational method.
